Coffee Bean Processing and Roasting 101
The coffee plant produces a red or purple fruit, but people are less interested in that than they are in the actual coffee bean. Technically speaking the bean is the pit, similar to the pit found in a cherry or apricot, but with two half oval shapes facing each other. This pit, containing up to 2.5 percent caffeine, is a major export for several countries.

The History of Coffee
As a young Italian-American girl, growing up in Southern California in the early 1960s, it would be a comedic understatement to say that coffee was a huge part of my life. My grandparents immigrated from Italy (Sicily) in the 1940s, and by the age of six, I could break down and load up the family espresso maker like it was second nature!
